THE HIS EDIT · DESIGN CONCEPT

Cacao Ridge Dark Chocolate

A sculpted cacao-led chocolate concept for a shared after-dinner pause.

Solid chocolate conceptDeep cacaoFormat: one sharing square

The smooth artwork previews the form. The earlier solid-chocolate trial includes cacao nibs; their distribution and the finished surface need a moulding trial.

The proposed taste

A sculpted cacao-led solid chocolate direction built around cocoa, cocoa butter and sugar. Its cacao percentage, snap, sweetness and finished piece weight have not been finalized.

A moment to share

An idea for a shared after-dinner pause: small pieces, a warm table and time to notice the chocolate.

A simple tasting idea

Water or an unsweetened tea makes a simple starting point for assessing the eventual cacao profile.

His and Hers are flavor edits. Every design can be enjoyed by any adult, according to taste.

Draft ingredient direction

  • cocoa
  • cocoa butter
  • sugar

This is a flavour summary. The complete weighed bench formula is in the recipe workshop below. It remains a development prototype, rather than a verified retail label or finished-product ingredient list in order of weight.

Does this chocolate already have a final cacao percentage?

The input allocation is 930 g of nominal 70% dark couverture, 60 g roasted cacao nibs, 8 g cocoa butter and 2 g salt. The supplier percentage describes that input couverture; it does not establish the finished piece’s cocoa percentage, nutrition or weight.

Allergy information is provisional

No allergen declaration has been finalized for this concept. Do not interpret the empty draft list as an allergen-free claim.

Provisional information only. Complete supplier subingredient and cross-contact review is pending. Do not use this concept for allergy decisions. If you have a food allergy, wait for a verified finished-product label before making a consumption decision.

A form of its own

Original large soft rounded square with two pillowed diagonal triangular fields. The digital positive master measures 72 × 72 × 9.2 mm and contains integrated raised HIS | HER lettering. These are design measurements, not finished piece weight or food-contact approval.

Both HIS and HER are raised geometry on two large triangular halves of the same full square, with a shallow diagonal sharing groove. The recorded lettering target is 9.75 mm high with 0.65 mm of relief. Professional moulding and food-contact validation are still pending; His and Hers remain flavour edits for personal preference.

Inside the proposed recipe

A complete weighed culinary formula for professional development, with the supplier checks and release validation still to complete.

Recipe workshop1,000 g input prototype

Culinary bench prototype · bench-v1-format-review-v33 · professional review pending

Proposed format: Large HIS/HER sharing square; chocolatier adaptation pending.

Earlier flavour trial: Individual solid dark chocolate and cacao nib pieces.

The earlier bench method explores flavour and texture. The manufacturing method for this sharing square still needs development.

Exactly 1,000 g of allocated ingredient inputs before evaporation, bowl losses and recovered coating/shell chocolate. This is not 1,000 g of finished saleable output. The current presentation is one 72 x 72 x 9.2 mm sharing square; adapting this bench formula to that tooling and establishing its finished weight/yield remain pending.

Bench method

  1. Bench-method scope: Individual solid dark chocolate and cacao nib pieces. The steps below preserve the earlier flavour/emulsion trial method and its input allocations. They have not been validated to manufacture the current large sharing square; forming small centres or individual prototype cavities is a bench technique only.
  2. Before a square trial, a qualified chocolatier must develop a suitable food-contact negative mould and validate tempering, letter/groove filling, air release, demoulding, shell/cap/filling dimensions where applicable, cooling, shrinkage, the continuous base and sharing break. The printable positive master is not food-contact approval. Do not assume the existing coating allocation fills this mould or yields a specified square weight.
  3. Weigh the listed allocated ingredients separately by component. Prepare clean dry equipment, food-contact trays/moulds and a monitored refrigerator; record supplier lots and temperatures. Do not add unlisted water, cream, extracts or decorative ingredients.
  4. Melt the dark couverture with the allocated food-grade cocoa butter without introducing water. Ask the couverture supplier/chocolatier to confirm an appropriate tempering curve for this added-fat blend; test a small sample before moulding.
  5. Fold in the ready-to-eat roasted nibs and fine salt shortly before moulding. Dose into individual clean dry food-contact prototype cavities and tap gently to release air. Record each cavity dose, actual finished piece mass/count, recovered chocolate and handling losses; no finished mass or commercial piece count is assumed.
  6. Set under the supplier-recommended chocolate processing conditions, avoiding humidity and temperature shocks. Demould only after clean contraction. Seal samples in food-contact packaging and record appearance, snap and bloom over the agreed trial protocol.

Equipment

  • Calibrated 1 g balance plus 0.1 g spice balance
  • Probe thermometer and monitored refrigerator
  • Clean dry bowls, spatulas and an immersion blender
  • Food-contact moulds or trays; piping bags where appropriate
  • Food-contact sealed sample containers and a batch/temperature log

Handling and release validation

Unvalidated solid chocolate prototype. No commercial shelf life or finished storage specification assigned.

  • Use ready-to-eat supplier-validated chocolate/nibs, dry hygienic equipment and sealed food-contact sample packs. No cream or other water-bearing ingredient is added.
  • Follow the chosen chocolate supplier storage conditions; avoid odours, moisture and temperature shocks. Keep the trial quarantined from sale until professional review.
  • Chocolatier signs off flavour, texture, supplier composition, emulsion and tempering curve for the exact selected couverture.
  • Qualified food laboratory/food technologist establishes sampling, water activity, relevant pH/moisture and microbiological testing for the finished filling and product.
  • Validate refrigerated or ambient storage, realistic Indian transport temperature excursions, packaging barrier/food-contact compliance, oxidation, bloom and migration before assigning any use-by date.
  • Verify full subingredients, allergen controls/cross-contact, accurate finished net weight, nutrition analysis or accepted calculation and final Indian label/licensing requirements.

The current pack concept contains one complete 72 x 72 x 9.2 mm HIS/HER sharing square. Its finished mass, serving size and accepted batch yield are unassigned. Measure actual square weights, retained finish, recovered chocolate and process losses in repeatable food-contact mould trials. A chocolatier must validate shell/cap/filling thickness and seal integrity for ganache flavours, groove/base strength and sharing break for every flavour, plus label net weight and packaging. Neither CAD volume nor 1,000 g of allocated inputs establishes a commercial unit count. This solid-chocolate formula has no ganache shell or filling; validate nib distribution, cavity filling, contraction and snap for the complete square. Its earlier individual-cavity trial is not evidence of a validated 72 mm square process.

No finished calories, macros, caffeine, cocoa percentage or performance effects have been established. Supplier cacao percentages describe input couvertures only.

From concept to chocolate

Confirm the cocoa recipe and finished weight, verify the entire ingredient list and factory cross-contact, and validate temper, storage and heat protection. An empty draft allergen list is not an allergen-free claim.

Before this design is offered for sale, its recipe, finished weight, verified allergen information, packaging, storage guidance, shelf life, pricing and availability must be confirmed.

This chocolate concept makes no claims about libido, sexual performance or medical effects. Its proposed character is about taste, thoughtful gifting and the atmosphere of an evening.
